Chocolate Cake (Pressure cooker made)

I am a huge fan of bakery products and love baking. But not having an oven or OTG put me at a disadvantage of not baking at home. A few friends suggested baking using pressure cooker and I tried. It was a huge success!! :) Now, nothing can stop you from baking a cake. Not even an oven/OTG. Follow this simple recipe to make cakes in our pressure cooker!! You can follow any cake recipe and bake it using a pressure cooker. 

Ingredients: (Serves 8)
Eggs                                  - 3 
Brown sugar/Normal sugar - ½ cup 
Wheat Flour                      - ½ cup 
Powdered Almonds            - 1 cup (loosely filled)
Baking powder                  - 2 ½ teaspoon

Pinch of salt
Olive Oil/vegetable/sunflower oil - little more than ¼ cup
50% dark chocolate - 120 g 
Orange - 1 (Juice + zest) 

Optional (as needed) 
Raisins 
Chopped almonds
Candied peels

How to make:
  1. Whip the eggs and sugar until the mixture is light.
  2. Double boil and melt the chocolate, add orange zest, orange juice and olive oil. 
  3. Now, add the liquids to beaten eggs and mix well. 
  4. Mix wheat flour, powdered almonds, baking powder and pinch of salt using a sieve or if you are mixing by hand, mix thoroughly. 
  5. Now, gently fold the flour into the eggs forming a smooth batter. Folding is very important - if its not folded properly, cake may not rise. (Folding - add little flour into beaten eggs and gently mix without forming lumps. Repeat the process rapidly while retaining as much air possible) 
  6. Add candied peels, raisins etc into the batter. 
  7. Grease an aluminium round tin/stainless steel vessel and pour the batter into it. Remember the size of cake tin should be larger than the batter size allowing space for the cake to rise.

The hole in cake is due to repeated checking whether its baked or not :)
Preparing the pressure cooker: 
  1. Remove gasket (rubber thing) from cooker lid and also the whistle/weight. 
  2. Keep a plate at bottom of the cooker and place cake tin over it. Covering the bottom with sand/salt is not necessary. 
  3. Preheat the cooker over medium flame for 5 minutes, place cake tin and bring it down to sim. Bake fully in sim mode. 
  4. It takes around 30 to 45 minutes for the cake to be baked. Check by inserting a knife and if it comes clean, cake is good to go. Once its baked, remove cake tin from pressure cooker, cool and then serve.
